At Madan Lal & Sons, the subject goods include three varieties
of apples - Delicious, Red Delicious and Golden Delicious - which are
grown and marketed for the fresh market. Apples for the fresh market are
sold for retail, as opposed to apples sold for further processing into
juice and other products.
Delicious and Red Delicious apples are of oblong-conic shape and red
or red striped on a yellow to green background.
Golden Delicious apples are yellowish to green in colour and oblong-conic
in shape.
The Delicious variety is an older variety of apple from which the Red
Delicious variety was botanically derived. While the Delicious is still
being harvested commercially from existing orchards, it is being replaced
by new plantings of the Red Delicious strains and thus may be phased out
eventually. The Delicious variety is included under the Red Delicious
variety for statistical purposes.
The grading standards are based on uniformity of size, shape, minimum
and maximum diameters, colour, maturity, freedom from disease, defects,
damage, and cleanliness. Apples are also pressure tested for firmness
to establish internal quality.
Apples are also sized for marketing in the fresh market. In general,
these apples must meet a minimum diameter of 5.7 cm (2.2 inches). The
size will determine the number of apples that can be layered into a carton.
A size "113" means that there are 113 apples in a tray pack
or cell pack carton weighing approximately 42 lbs. The most common apple
size counts are 72, 80, 88, 100, 113, 125 and 138.

Apple Ambri (Ambri Kashmiri)
Ambri
is indigenous to Kashmir and continues to enjoy superiority by virtue
of its crisp, sweet flesh and excellent aroma. The fruit is blushed red,
striped, medium sized and oblong to conical in shape with longer storage
life. The fruit matures in the last week of September to first week of
October. It is an excellent dessert variety.
American Trel (American Apirouge)
This
variety has crisp, juicy, greenish white and sweet flesh and is usually
medium-sized, as a result of which it has become very popular with consumers.
Oblate-shaped, blushed and patchy red with a smooth surface, it matures
in the last week of September. A good dessert variety.
Delicious (Red Delicious)
A
world renowned variety, it is one of the most widely grown apples. The
fruit is tapering in shape with characteristic five lobes at the apex.
Skin is smooth, striped and blushed red, flesh is fine grained, greenish
white, sweet, very juicy and crisp with a good aroma. Size is medium to
large and it matures by the end of September. A good dessert variety.
Maharaji (White Dotted Red)
A
large-sized apple with bright red colour on a green base with conspicuous
dots. Flesh is crisp, very juicy, acidic and aromatic. The variety sweetens
in storage and is an excellent keeper. The fruit matures in late October.
It is also a cooking and dessert variety.
Hazratbali (Benoni)
A
medium sized apple with round to slightly conical in shape and red to
striped skin; white juicy and sweet flesh. It is the earliest variety
of apple available from the Valley, maturing in mid-July.
Kesri (Cox's Orange Pippin)
An old
English medium-sized apple; it is round to conical in shape with skin
orange red deepening to bright red. The flesh is yellow, firm, crisp,
tender and very juicy. A dessert apple with good aroma and sub-acidic
taste. The fruit matures in mid August.
Pear (Nakh Kashmiri)
This
variety gets the name from its grained flesh. A conical shaped small to
medium sized variety with crisp, white and juicy flesh. The skin is thick
and green in colour that turns yellow on ripening. Carries well in storage
and is an excellent dessert variety.
Plums (Santrosa)
Fruit
medium, roundish, regular, skin smooth and thin flesh deep red, juicy,
sweet and soft full of aroma, stone cling type.
Almond
Kashmir
almonds are known for their superiority of taste and are very popular
with the consumers. Like walnuts these are also grouped on the basis of
shell thickness as 'Papery', 'Thin-shelled' and 'Thick-shelled'.
Considered as highly nourishing and of great medicinal value, its kernels
are used in confectionery as well as dessert.
Its trees are the first blooming fruit trees and an enchanting sight
that lends glamour to the spring in Kashmir.
Apricot (Gilgati Sweet)
Fruit
medium, from oblong to rather ovate, slightly irregular in shape. Cavity
rather deep to medium in depth, regular and acute. Skin yellow when fresh
(brown yellow when dried) less juicy, sweet, moderately flavoured, stone
free, kernel sweet. Ready for picking in the last week of June.
Cherry (Gilas Misri)
Large
sized red coloured; firm skin and flesh is sweet and juicy. Medium sized,
light red coloured and quite fleshy. The flesh is juicy and sweet with
acidic tinge. Comes into the market in May. This variety is large-sized
and attractive with creamy-red colour. The flesh is firm and juicy but
slightly acidic. A good keeper. Excellent for canning and dessert purposes.
Walnuts

Walnut fruit is made of three parts: the husk, shell and fruit. The outer
layer, husk contains tannin, juglandine, citric and malic acids that,
in decoction, are favorable to the stomach. Besides being used medicine,
it is still used for dyeing of hair, clothes and fine furniture. Depending
on the species of walnut the second part, shell, is generally difficult
to break. Shell's strength provides an excellent abrasive material. It
is used as addition in tyre producing
industries. Finally, fruit, has been eaten for centuries, in all its forms:
uncooked, cooked, salted, sugared, etc. It has good taste and has cholesterol
lowering and anti arteriosclerosis roperties.
